Wuyi has three main tea cultivars, Da Hong Pao, Rou Gui, and Shui Xian. Among the three Shui Xian is the most widely used planted cultivar in all of Wuyi. Many of the Wuyi tea farmers have nicknamed Shui Xian "Cai Cha", which means tea that is planted around Cai Yuan-Vegetable garden. Chinese tea farmers often have a small vegetable garden near their home to harvest vegetables. Shui Xian may not be as fragrant as Da Hong Pao or Rou Gui, but definitely has an outstanding flavor! This oolong tea is full-bodied with a lingering sweet aftertaste. A beautiful tea with pure balanced sweetness that fills the palette. It's charcoal roasted three times to give it a distinct sweetness that's followed by coffee notes and finish similar to a Darjeering Black tea.

Infusion length: 25 Seconds. May be infused 6 additional times.

Western Brewing:

Tea: 1 grams per 4 ounces of water
Water temperature: 195°F - 90°C
Infusion length: 2 minutes. May be infused 3 additional times.
